Salad! Beets, Blue Cheese and Apple


We have a meat free salad, however, rest assured there are welcome carbohydrates. 

I like the naturally sweet beets, crunchy apple, creamy cheese and tangy dressing.  It works!

Chopped eating apple and cooked beets with blue cheese on microwaved bulghur wheat.  A dressing of cider vinegar and olive oil, seasoned well with salt and pepper finishes the dish.

Please ignore any instructions imploring bulghur wheat should be boiled in a saucepan.  Simply rinse the wheat (around 50g per person) and add 1/4 cup of water per 50g of wheat.  Microwave for 2 minutes, stir and decide if a little more cooking is required.

Tomato Stuffed with Grey Shrimp – A Belgian Classic

 A true Belgian icon: the tomato stuffed with North Sea grey shrimp. Fresh, salty, delicate, and wonderfully simple. The whole dish relies on top-quality ingredients — ripe tomatoes, hand-peeled grey shrimp, and a light creamy dressing. Add some crisp vegetables and a hard-boiled egg, and you’ve got a perfect brasserie plate, especially with a good Belgian beer.

 A classic sweet-sour vegetable dish from Sicily, served warm or at room temperature. Great on bruschetta, with grilled fish, or as part of an antipasto.

Hummus with Ground Lamb

A meze...?  Certainly a tasty Mediterranean plate.

A plate with inevitable tweaks, too.

It's microwave hummus from canned chickpeas topped with spiced ground lamb.  The garnish of lightly toasted pine nuts or almonds (pictured) is optional, however parsley is recommended.

Salad, with Potatoes and Meat

It started with 'good' salad intentions (don't they all?)

Meat and potatoes make a good salad over here.  We have baby potatoes (small waxy ones), jarred artichoke in oil, prosciutto and parsley.  Boiled egg would have worked too.

Tzatziki meets Raïta

 When Greek tzatziki visits Mumbai.

A refreshing cucumber salad — not a dip — silky with thick Greek yogurt, perfumed with mint + coriander, hit with lime, cumin, and yes… raw garlic for that unapologetic Mediterranean punch.

Only in Europe do we take the idea of salad 🌿… and replace every single leaf with pork. The French and Belgians call it salade de viande, the Germans have Fleischsalat, and lettuce is filing a formal complaint to the UN...which means nothing is going to happen .

Autumn Salad with Lentils

Fifty posts and between us only one salad.  Impressive of sorts!  


Salad number two is lentil, cheese (feta or similar) mixed greens including spinach and roasted sweet potato.  The dressing is olive oil and balsamic.

The orange was easy to segment with a tomato knife, victory taken.  Segmenting isn't difficult either, simply remove peel and white bits of orange (pith)..more later.
