Meat and potatoes make a good salad over here. We have baby potatoes (small waxy ones), jarred artichoke in oil, prosciutto and parsley. Boiled egg would have worked too.
This working from home lunch naturally serves 1.
Ingredients:
3-4 salad potatoes, scrubbed and dropped into cold salted water. Bring to a simmer and cook for 15 minutes then drain.
Jarred artichoke in oil, remove artichokes.
Prosciutto, remove from the packet.
A few sprigs of parsley, chopped.
A dressing of:
1/2 tsp Dijon mustard, 1 TBSP cider vinegar, 1.5 TBSP olive oil, 1/4 tsp salt, a few twists of pepper.
(Shake everything together)
Method:
Halve and plate warm potatoes, coat with 1/2 dressing.
Add ham, artichoke, remaining dressing and parsley.
