This is a long time family favourite. Lardons, frisée salad, potatoes, cream, raspberry vinegar and ( lots ) of garlic combine to create a very satisfying salad dinner.
This get together bowl of scrumptiousness is very easy to make and just requires you to follow a couple of important steps.
First rub the salad dish with loads of garlic. A glass bowl is welcome here as you will be able to see the garlic deposit on the sides.
Then vigorously rub the frisée around the sides of the bowl so as to infuse it with all that garlicky goodness.
Sauté your lardons in a pan with raspberry vinegar. This will contrast fat and sharpness.
Add to salad bowl.
Then throw in your warm boiled potatoes. They will slightly welt the greens. This is intentional.
Finish by pouring liquid cream and a little additional raspberry vinegar. Give the dish a generous crack of black pepper.
Mix well. Attack.
Ingredients for 4:
1kg potatoes ( not too firm )
20cl cream
300gr lardons
Whole big frisée salad
4 cloves garlic
Raspberry vinegar to taste
Black pepper
Pairing tip: a Belgian raspberry or cherry beer.
Pro tip: left overs are delicious next day.
