Charred Romaine Lettuce Cesar Salad

A post in honour of tomorrow's thanksgiving leftovers. Served here with apple and a side of red cabbage coleslaw (another recipe to share soon).

For me, it's the dressing and some crispy skin that make the dish.

Crispy skin is easy...simply cook the skin in a dry pan until done to your liking.  I tried grilling/broiling and other methods but this is simple and always works.


A romaine lettuce, halved gets a drizzle of oil, sprinkle of salt and around 5 minutes on a griddle.

Perfect.

There's a cheat cesar dressing made with bought mayonnaise.

Dressing (2): 
2 TBSP mayonnaise
1 TBSP natural yogurt
1/2 tsp dijon mustard
1.5 TBSP grated parmesan
1/8 tsp black pepper
1/4 tsp salt
2-3 anchovies, finely chopped (encouraged)
1.5 tsp cider vinegar

Method:
Mix the dressing up, taste and adjust with a little olive oil if too sharp.

Salad (2):
1 romaine lettuce, halved, charred and chopped
200g of cooked, sliced turkey leftovers
2 chopped tomatoes
1 TBSP shaved parmesan
Crispy turkey skin, sliced
A cored and diced apple


Optional:
4 rashers of crisped streaky bacon
