Rainbow Chard Quadrato (Square Spaghetti)

This is what happens when my shopping list (on App) simply says Vege.


The list is often vague so I can choose whatever catches my eye in the supermarket then figure out what to do with it.

Here we have a sauce with bacon, egg, garlic and chard (stalks plus leaves).


I can't call it a Carbonara as it has garlic and the chard, although the method of warming the egg is the same.

This working from home lunch, of course serves 1.

Ingredients:
85g of pasta
2 rashers of smoked bacon, sliced
1 whole egg
17g of parmesan/pecorino, grated
Black pepper
4 chard leaves and stalks, chopped

Method:
Fry bacon and chard stalks in a little olive oil for around 10 minutes

Beat egg, add cheese and black pepper.  Add a TBSP of pasta cooking water to the egg.

Cook pasta to al dente.

Add pasta to the chard stalks and bacon, add chard leaves.

On a LOW heat add the eggy cheese mixtute and stir vigorously.

Self-congratulate for not making scrambled egg.

Serve and scoff hungrily.
