Pup nose, right? (I did that on purpose). She's very good with food, interested, looks and doesn't touch.
I pan fried one small onion, thinly sliced, in butter until soft and removed it. Livers next, with salt, pepper and more butter. Use a fairly high heat and cook for approximately 2 minutes each side. (Brown on the outside, pink inside).
Add sage and sherry (or madiera) stir, remove and blitz with the onion.
Embrace the audience.
Spread on toast with cranberry, lingonberry or redcurrant jelly.
Ingredients (4 - starter):
1 small onion finely slicdd
250g chicken livers
1-2 TBSP butter
2-4 TBSP Olorosso sherry or Madeira
1 TBSP chopped fresh sage
Salt and pepper.
Toast and berry topping of choice
The pup? She enjoyed some dry fried liver that (in true pup fashion) was scoffed before I could take a picture...Her attentiveness was rewarded.
