I wish the London terrace (and weather) would facilitate a mango tree. However, reality has kicked in and frozen mango also happens to be rather good. (Thank-you, Covid for that discovery).
Ingredients (2)
Sauce:
2 tsp honey or sugar
1 TBSP +1 tsp light soy sauce
2 TBSP white rice vinegar
3 tsp thai Sweet Chilli Sauce
1/2 tsp arbol chilli flakes
2 tsp cornflour
2 tsp shaoshing
90 ml chicken stock
1/4 tsp white pepper
Fruits and veges:
1 red onion, diced
1 red pepper, diced
1/2 cup frozen mango, defrosted
Aromats:
1 cm of ginger, grated or chopped
2 cloves of garlic, crushed
Protein:
2 portions of chicken breast, sliced
Method:
Mix sauce, add a little chopped ginger and garlic if you wish.
Stir fry (remaining) garlic and ginger, 30 seconds.
Add onion and pepper, stir fry 2 minutes.
Add chicken and when almost done, add sauce then mango.
