Firstly the cheese doesn't have to be Brie, medium cheddar yep! Munster, that too. Any melting cheese is fair game.
Burger:
12 or 15% Fat ground beef (100g or 125g per person)
1/4 tsp salt per burger (smoked salt is good)
Few twists of black pepper (no one is counting)
Optional some mesquite seasoning
Method:
GENTLY form into Burger shapes by hand.
Sear in a hot pan, 2-3 minutes, flip add cheese and lid on the pan cook 2-3 mins more.
Rest.
Onions:
1/2 a medium onion per person, sliced
A little salt
Fat of choice (beef fat or oil 1-2 TBSP)
1/2 a tsp honey
A TBSP or so of bourbon
Method:
Caramelise onions, low heat, salt added, lid on pan (it's easier to pile them up as the steam helps them to soften). Stir occasionally, adding a splash of water if they start to stick.
Once soft and brown (after 20 or so minutes) stir in honey then warmed lit whiskey (extractor fan off and stand back).
Assemble your burger creation in buns (toasted if you wish) with a leaf of healthy lettuce.
Tip: I have a gas hob. To flambé the onions, Bourbon is first warmed gently over the flame in a ladle. Then, tip the ladle into the flame to set the Bourbon alight. Pour over the onions.
