A bowl of thick yogurt, a drizzle of good olive oil, a handful of vibrant toppings — sometimes the simplest dishes are the most satisfying. Mastabe is one of those humble preparations that feels both rustic and elegant at the same time.
This Turkish-style yogurt dish celebrates contrast. The yogurt is cool, creamy and slightly tangy. The pomegranate seeds burst with sweetness and acidity. Toasted almonds add warmth and crunch, while sesame seeds bring a nutty aroma. A final drizzle of olive oil ties everything together.
It is the kind of dish that works beautifully as a mezze, a light starter or even a refreshing side alongside grilled meats or flatbreads. Visually striking and incredibly simple to prepare, mastabe proves that a few good ingredients can go a long way.
Ingredients (2 servings)
400 g thick Greek yogurt
2 tbsp extra virgin olive oil
3 tbsp pomegranate seeds
2 tbsp slivered almonds
1 tsp sesame seeds
1 tsp black sesame seeds
A pinch of flaky sea salt
A few fresh spinach leaves (or herbs such as mint or parsley)
Flatbread or pita for serving
Recipe
Start by lightly toasting the slivered almonds in a dry pan over medium heat. Stir frequently until they turn golden and release a nutty aroma. Remove from the heat and allow them to cool.
Spread the thick yogurt into a shallow bowl or plate, creating gentle swirls with the back of a spoon.
Drizzle the olive oil over the yogurt.
Scatter the toasted almonds, pomegranate seeds, sesame seeds and black sesame seeds evenly across the surface.
Finish with a pinch of flaky sea salt and garnish with a few fresh spinach leaves or herbs.
Serve immediately with warm flatbread for dipping.
Fresh, creamy and full of texture, this Turkish mastabe is proof that yogurt can easily become the star of the table.
