Lobster with Gin and Herb Sauce

Ingredients

1 cooked lobster

For the gin herb sauce

2 tbsp mayonnaise

2 tbsp thick cream

1 tbsp fresh parsley, chopped

1 tsp gin

1 tsp lemon juice

Preparation

Start by preparing the sauce. In a bowl combine the mayonnaise and thick cream until smooth and silky.

Add the chopped shallot and minced garlic. Stir in the dill and parsley, which will bring a fresh aromatic character to the sauce.

Add the gin and lemon juice. Season with salt and freshly ground black pepper. Mix well and taste. The sauce should be creamy, slightly herbal, with a delicate hint of gin in the background.

Place the sauce in the refrigerator for about 15 minutes so the flavours can meld together.

Serve

Split or crack the lobster and arrange it on a plate. Serve the gin and herb sauce generously on the side for dipping.
