I'm talking East Coast USA. I thought naming the continent would be prudent. The salad is along the lines of a classic Waldorf (as in the hotel, Waldorf Astoria).
I went close up on the pic. There's cooked chicken, almonds, apple, celery, dill, spring onions and a mayonnaise based dressing.
Wait, what, no grapes? Halved seedless grapes could absolutely go in.
Uh ho, I just thought, we're sharing another salad with meat. Joking apart, I'm not sure what happens with this salad but somehow the ingredients and dressing combine beautifully.
Ingredients (2):
Salad Ingredients:
2, skin on chicken breasts, cooked, cooled and diced. (Simply add a drizzle of oil, salt and pepper and pan fry or griddle gently until cooked through)
2 stalks of celery, sliced fairly thin, around 0.5 cm (no one is measuring)
2 small apples, cored and diced
50g almonds, whole and blanched (skin removed, I tend to buy them this way)
3 spring onion, fairly finely sliced
Optional:
1 cup of halved grapes
4 leaves of crunchy lettuce, shredded
Salad Dressing:
2 TBSP good mayonnaise
2 TBSP sour cream
1/2 TBSP fresh lemon juice
1/2 tsp dijon mustard
1 TBSP chopped fresh dill
1/2 tsp salt
1/4 tsp black pepper
Method:
Prepare salad ingredients
Dress
Consume
Tip:
If you omit the lettuce this stores well in the fridge for a few hours.
