Croque Monsieur with Parsley Sauce

I had this thought after yesterday's ham and parsley sauce.  It works!

Here's the finished article, on sourdough baguette (I know, it's a little bread twist on a classic sliced white bread croque monsieur - as is the parsley sauce).


Smug? Yes and desrvedly so.  Green beans added for vegetable goodness.

We start the croque monsieur here.. with glazed gammon, thinly sliced using my sharpest straight bladed knife.  There are green beans,  washed and half trimmed too.



See the sandwich (before entering the oven) ?


I halved the 'chunk' of baguette, lenthways, buttered and toasted the cut sides.

Each half had a light smear of dijon mustard, then a generous spread of parsley sauce. Finally, a little shredded cheddar then thinly sliced ham (enough to cover).

Sandwich the two halves together (this requires a little dexterity, or luck).  Finish with a smear of parsley sauce and a sprinkle of cheese on top.  Oven bake for 15 minutes at 190c fan (with oven fries) and simmer some green beans.

The timing of the sandwich and veges is perfect (I happen to have 15 minute oven fries).

It's perfectly crunchy on the outside and soft inside.  

The Parsley Sauce:

I should mention, if you make the parsley sauce without nutmeg, it's equally good with white fish.  Enjoy.
