A spiced squash soup with cured croatian ham 'croutons' and a grilled cheese toastie.
Comfort food with 'feel good' factor.
Ingredients (4)
Spices/Aromats:
1 garlic clove, crushed
1/2 sprig of fresh rosemary
1/4 tsp chipotle chilli flakes
1/3 tsp cumin
1/4 tsp hot smoked paprika
1 bay leaf
Olive oil or Avocado oil to fry
Veges:
1 medium squash, cubed
1 medium carrot, chopped
2 sticks of celery, chopped
1 decently sized onion, chopped
Stock:
1 liter (approx) vege stock
To serve:
Butter or crème fraîche
Diced cured ham (genius)
Hunks of bread or a cheese toastie (mild blue cheese works here too)
Method:
Fry aromats and spices in oil, 30 seconds to one minute,
Add veges, saute gently for 2 minutes until coated in the spices.
Add stock, simmer for 45 minutes.
Cool and blend, add butter and/or crème fraîche to finish and garnish to your liking.
A cheese toastie, to serve (pictured) is really never a bad idea! Mild blue cheese works very well too.
