Cola is popular in Mexico, trust me! This interesting pairing makes a lot of sense.
I love a chicken wing, especially oven baked with baking powder (it crisps them beautifully).
There's no marinade for these wings. Time favourable bonus.
Coat the dried little wings in cumin, smoked paprika, salt, black pepper, and baking powder.
Bake on parchment or a rack.
Glaze and return to the oven for 10 minutes.
Ingredients, serves 2 (12 winglets):
Spice coating:
1/2 tsp cumin
1/2 tsp salt
1.5 tsp smoked paprika
2 tsp baking powder
Glaze:
60 ml cola
1 chipotle in adobo (or 1 tsp chipotle flakes)
1/2 tsp mesquite
Plating:
A squeeze of lime and shake of hot sauce (cholula).
Serve with stir fried onion, red pepper and corn, a sort of warm Salsa.
Method:
Add the wing spice coating to a bag and shake the dry wings to coat.
Oven bake the wings on a rack or parchment for 30-40 minutes at 200 C fan. Turn once. They should be fully cooked so this depends on the size of the wings.
Make the glaze, reduce cola and spices for 4 or so minutes in a small pan until syrupy.
Brush the glaze on your wings, put them back in the oven and cook for 10 minutes more. It's good to watch the wings at this point, we want a little 'catch' of the sugars whilst not burnt.
