Ingredients
250 g lamb sausage meat
2 tbsp red curry paste
200 ml coconut milk
200 g tagliatelle or noodles
Fresh coriander or parsley, chopped (optional)

Method
1. Cook your noodles until al dente. Drain and set aside.
2. In a hot pan, brown the lamb sausage meat, breaking it into small pieces. Add the chillies
3. Stir in the red curry paste and fry gently to release the aromas.
4. Pour in the coconut milk and simmer for a few minutes until creamy and slightly thickened.
5. Add the noodles, toss everything together, and finish with fresh herbs if you like.
