Taco Tuesday

Let's make tacos.  If anyone has looked at the ingredients on supermarket flour tortillas..you'll agree on home made.
Here's a finished taco (of course there was more than one).

How did we get here?  Taco Tuesday is popular in the US (although a friend of mine embraces taco Saturday).

We start with a dough that makes 4 large tortillas or 8 medium sized tacos.

Make the bread (details later).  Roll the dough into balls, medium, large or both.  Inspiration pictured.


Smash it with your heaviest frying pan (quite fun).


Roll (as I'm not strong enough to replicate a tortilla press).

After rolling.   (Sing 'Rawhide' if you feel inclined...improvise the lyrics.."keep those tacos rollin' rawhide."


Then in the wok to cook.


I am a little better at making the smaller ones.


Recipe (makes 8 medium - serves 4)

Ingredients:
1/2 cup bread flour 
1/2 cup cake flour
1/2 tsp salt
1 TBSP veg oil
75ml hot water (microwaved works)

Method:
Knead the above for 6 minutes or so, rest the dough for 20 minutes.

Divide into balls and press then roll quite thin.

Cook in a moderately hot pan for 45 seconds each side (look for bubbles)

Cover with a clean tea towel whilst cooking the others.  This keeps them soft.

Today, they were filled with the chicken and black bean chilli, cheese, lettuce and some home made pico de gaillo.
