So simple and i'd even declare them breakfast food, given the oaty topping.
There's a pressed base, berry filling (frozen berry mix is fine, because we have a trick) and then the topping.
Parchment line a suitably sized dish for 8 bars (25cm by 20cm works).
For the base:
150g plain flour
40g sugar
50g butter
2/3 of a large egg
1/4 tsp vanilla extract
Method:
Crumble butter into flour, stir in sugar, egg and vanilla.
For the oats:
70g oats
30g sugar plus 1 tsp vanilla sugar
35g metled butter
Method:
Mix.
Berries next:
3 cups of frozen berries
1/3rd cup of sugar
3 tsp cornflour (very importsnt, I forgot this once)
1/4 lemon juice
Method:
Mix.
Assemble:
Press the base into your prepared dish (using the bottom of a clean glass can help).
Top with berry mixture.
Top with oats.
Bake at 180 Celsius for 20 minutes.
Cool in the dish and refrigerate overnight (this is the hard part, trust me).
