🍝 Fresh Fusili with Eringii & Sage
A comforting Italian-style dish with a hint of heat and smokiness — simple, elegant, and ready in minutes.
Ingredients
Fresh fusili pasta
1 small onion, finely chopped
Smoked bacon, diced
A handful of cherry tomatoes, halved
1 red chilli, finely sliced
Fresh sage leaves
Thick-cut Eringii (king oyster) mushrooms
Cream (preferably full fat)
Parmigiano Reggiano, grated
Olive oil, salt, and pepper
Method
1. Heat a little olive oil in a pan and gently sauté the onion, bacon, cherry tomatoes, chilli, and sage until fragrant.
2. Add the Eringii mushrooms and cook until lightly browned and tender.
3. Pour in the cream and simmer until the sauce thickens slightly.
4. Toss with freshly cooked fusili and adjust seasoning.
5. Serve immediately, topped generously with grated Parmigiano.
Warning: could cause spontaneous declarations of love to Italian cuisine and even yourself.
Serving tip: Pair with a chilled glass of Verdicchio dei Castelli di Jesi or a young Chianti Classico.
