I loved this picture (it isn't mine). Anyone who has made blueberry pancakes could identify with the bursting blueberries though.
Of course blueberry pancakes aren't just for Halloween. Here's my recipe from the good ol' US of A.
Makes 10 pancakes (2 people- although I heard yesterday that a U.S. stack is 6). Hmmn maybe this is a Bermudan Stack?
Ingredients A (dry):
125g plain/cake flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
35g castor sugar
1/2 lemon zest
Ingredients B (wet):
1 egg, beaten
150ml of milk
40g unsalted butter, melted
150g blueberries
Method:
Tip A ingredients to a bowl and whisk lightly to combine.
Make a well in the centre of the flour mixture.
Tip in B ingredients and whisk, slowly incorporating the dry ingredients into wet.
Gently fold in blueberries or keep them aside ready to decorate your pancakes in a creative manner.
Cook in a buttered pan on roughly 1/3 of the heat for 2 minutes each side.
My personal recipe notes describe them artfully as fluffy clouds of pancakes.
