If Spain Made Shakshuka

Shakshuka started in Tunisia, travelled across North Africa then around to Turkey.  I like to think if it went up to Spain we'd be eating this.  Chorizo and green bean shakshuka.

Recommended because chorizo and green beans really are a fab pairing.


Ingredients (2)
I 400g tin tomatoes
1 red pepper, chopped
1 small onion, diced
50-100g cured chorizo, skinned and sliced
150g green beans, washed and trimmed
1 garlic clove, crushed
2-4 eggs
Olive or avocado oil 2 TBSP

Spices 
1tsp hot smoked paprika
1/2 tsp salt or smoked salt..yay (I love smoked salt)
Black pepper

Garnish and Serving
2-4 TBSP fresh parsley, 20g crumbled feta and a hunk of bread


Method:
Crisp chorizo in pan and remove

In chorizo fat, cook onion and pepper until soft (perhaps slightly charred) adding oil as needed

Add spices, cook 1 minute

Add tomatoes, green beans and 1/4 cup water, cook 10 minutes

Add chorizo, crack in eggs, lid on and cook until whites are set (2 minutes)

Be proud! 

Serve in your dish of choice garnished with cheese, parsley and that hunk of bread.
